One of the best decisions we made during our retreat was hiring Francisco from PROYECTO BAMBOO GLOBAL (MAXMAX on Airbnb), a premier catering and private chef company based out of Tulum, but serving the following areas: Riviera Maya, Playa del Carmen, and Cancun; Puerto Escondido (Oaxaca), and Mexico City, in Mexico. In the European summer, we move to Ibiza (with scheduled reservations), and they are also starting soon in the city of Buenos Aires (Argentina). Having a professional private chef allowed us to remain completely focused on our planning sessions instead of grocery shopping, cooking, or cleaning. Every meal became an experience that enhanced both our productivity and our enjoyment of the retreat.

PROYECTO BAMBOO GLOBAL is a team of experienced professional chefs specializing in private dining, catering, and event logistics. Their team designs customized menus tailored to each client’s preferences, dietary needs, and food restrictions. They manage every aspect of the culinary experience—from purchasing the freshest ingredients and preparing each meal with professional precision to providing full restaurant-style table service, including setup, serving, clearing the table, washing dishes, and leaving the kitchen spotless after every meal. Throughout our stay, Francisco prepared breakfast, lunch, and dinner each day, blending traditional American favorites with authentic Mexican flavors. Every meal was thoughtfully prepared using fresh ingredients and beautifully presented. Some of our favorite dishes included a classic American breakfast accompanied by fresh seasoned fruit, flavorful beef and chicken tacos, Cajun grilled fish, and perfectly cooked T-bone steaks. Every meal looked as impressive as it tasted.

Beyond his culinary talent, Francisco demonstrated exceptional professionalism. He arrived on time for every meal, maintained a clean and organized workspace, served each guest with patience and attention to detail, and ensured every dining experience felt like a meal at a fine restaurant. Once everyone finished eating, he quietly cleared the table, washed every dish, cleaned the kitchen, and prepared the space for our next planning session. His warm personality, respectfulness, and commitment to outstanding service made him an invaluable part of our retreat.

A Culinary Journey from Buenos Aires to the Mayan Riviera

Francisco’s passion for hospitality and culinary excellence is reflected in every meal he prepares. His professional journey began in Argentina, where he first studied Public Relations because of his passion for creating memorable events. He later attended the Argentine Institute of Gastronomy (IAG), where his love for culinary arts truly flourished.

His career included working at the renowned Faena Hotel, where he developed discipline, refined his technical cooking skills, and specialized in sushi and Japanese cuisine. His culinary journey eventually brought him to Mexico, where he immersed himself in the art of fine dining, expanded his hospitality education, and continued mastering Italian and French cuisine.

Driven by an entrepreneurial spirit, Francisco later opened Portezuelo, a Japanese restaurant in Puerto Escondido. Today, he combines those international culinary experiences with a passion for creating unforgettable private dining experiences throughout the Riviera Maya. His cooking style is defined by precision, warmth, creativity, and a personalized approach that makes every guest feel like a VIP.
